Ingredients

4 | Tbsp | achuete oil |
2 | pc | garlic |
3 | pcs | bay leaf |
⅓ | cup | vinegar |
4 | Tbsp | patis |
2 | pcs | star anise |
1 | pack | Hunt's Tomato sauce 115g |
2 | tsp | pepper |
3 | cups | stock/water |
½ | cup | shitake mushrooms, sliced (or button mushrooms) |
½ | Tbsp | onion chives (for garnish) |
Cornstarch mixture | ||
2 | Tbsp | cornstarch |
3 | Tbsp | water |
Procedure:
- Sauté whole chicken in achuete oil moving it around on all sides. Add garlic, bay leaf, and vinegar. Add patis, star anise, water/stock and pour in Hunt's Tomato Sauce. Simmer until chicken is tender.
- Add shitake mushrooms and simmer. Thicken with cornstarch mixture.
- Garnish with onion chives.
