Ingredients
For the achuete oil: | ||
5 | Tbsp | cooking oil |
2 | Tbsp | achuete seeds |
For sauteeing: | ||
4 | Tbsp | achuete oil |
1 | Tbsp | garlic, minced |
2 | Tbsp | carrots, finely chopped |
½ | can | whole kernel corn, drained |
1 | can | corned beef 210g |
½ | tsp | sugar |
1 | can | Hunt's Pork & Beans 390g |
4 | cups | cooked rice |
¼ | tsp | salt |
¼ | tsp | pepper |
Procedure:
- For the achuete oil: Heat oil in a pan, then add achuete. Turn off heat, steep for 15 minutes before straining.
- Saute garlic, carrots, whole kernel corn, and corned beef in achuete oil. Add sugar and Hunt's Pork & Beans.
- Cook for 2 minutes, then add rice. Mix well and season with salt and pepper.
