Ingredients
2 | Tbsp | cooking oil |
4 | pcs | Vigan longganisa, skin removed |
1 | can | Hunt's Pork and Beans 175g |
8 | pcs | eggs |
½ | tsp | nutmeg |
1 | cup | milk |
4 | slices | whole wheat bread, cut into triangles |
parsley, chopped (for garnish) | ||
To taste | salt and pepper |
Procedure:
- In a sauce pan, saute the longganisa for 2 minutes. Add in the Hunt's Pork and Beans, then simmer for 3 minutes.
- In a bowl, whisk together 4 eggs, nutmeg, and milk. Dunk the bread slices in the mixture.
- In a pan, fry the bread slices until golden brown on both sides, then set aside. Fry the eggs sunny side up.
- Assemble the dish by having 2 slices of toast. Pour the longganisa and beans mixture, then top with fried egg.
- Garnish with parsley, then serve.
